Summer To-Do List: # 15 – Make popsicles.

I bought some local strawberries last week and we just weren’t getting to them so they became popsicles last night. 

 

It certainly hasn’t been popsicle weather around here lately {I turned the heat on Sunday night}.  But somehow it reached 70 degrees last night, which seems like the cut-off for popsicle eating.

Strawberry Banana Popsicles

  • Hull a bunch of ripe strawberries and puree in a blender.
  • Pour into the bottom half of the popsicle molds. {Aren’t these great popsicle molds?  Mason got these for his birthday from our neighbors}.
  • Freeze the strawberry puree for 10-15 minutes, but not too long that you can’t get the stick in.
  • Blend half a banana, half a cup of yogurt and half a cup of apple juice.
  • Pour over the partially frozen strawberry puree.  I dropped in a couple blueberries for an extra surprise.
  • Add the stick and freeze.  These frozen really quick – probably done in an hour.
